We have the privilege of living our lives in the wonderful world of making heartfelt dishes that represent my Mexican Heritage and Antonio’s Spanish traditions with care, love and fresh, custom ingredients. There is something so special about chopping an onion (aside from the tears of joy it brings) or a pepper and seeing a Paella come to life in a way that one of our family of visitors to our restaurant will scale the heights of the Niagara Gorge just to scream “Paella” because they love it so. A big part of the process is using fresh ingredients and cooking for you from scratch.
There are lots of restaurants out there who have pre-cooked, and pre-assembled meals delivered by an outside company to their kitchen where they essentially re-heat a pre-made dinner. We aren’t here to be critical of that process, it works for many successful restaurants we have all been to, me included. Many times this is done to save time and make the ‘process’ more convenient.
At Patio Andaluz, you have to pre-order or confirm with seating when you order a Paella. Why? It is because it is the reverse of convenient. It is hand crafted; it is full of freshly made, assembled to the exact customer tailored culinary greatness. Each Paella tastes differently, even the same menu item, why? Antonio’s much appreciated Detail – One of the comments we get all the time is why does your Salsa taste so much better than anything we have ever had? Simple, Salsa is handmade within one hour and it makes such a difference. Salsa made more than 60 minutes in advance of an order begins to see a noticeable change in taste.
